Formaggio Kitchen is an acclaimed specialty food retailer with four locations across Cambridge, Boston (South End), Kendall Square, and New York City. Renowned for its artisanal cheeses, Formaggio sources exceptional products directly from producers across the U.S. and Europe. Their curated offerings go well beyond cheese—featuring fine wine, beer, charcuterie, baked goods, olive oils, honeys, teas, spices, and confections.

In addition to retail, Formaggio operates a full-scale kitchen, offers wholesale distribution, provides catering services, and offers educational classes. Their operation includes e-commerce fulfillment, to-go dinner service, and NYC franchise supply, making their business model both complex and deeply customer-focused.

While previously running on NCR Counterpoint with a different provider, Formaggio Kitchen explored a partnership with RCS to ensure its retail technology could scale efficiently and be well-supported across all operational layers to meet its growth plans.

Before RCS

Formaggio Kitchen was using NCR Counterpoint POS across most of its locations but lacked a strategic partner with the depth of support and vision needed for its evolving business. With 11 registers, over 100 staff members, and various store formats—ranging from compact deli counters to a multi-department flagship location—they required a more responsive service partner and a roadmap that could keep pace with their multi-channel retail operations.

Their team faced challenges in maintaining consistency and integration across self-hosted infrastructure, e-commerce systems, inventory transfers, and accounting platforms (like QuickBooks 2019). Their New York franchise location was not yet on Counterpoint, creating additional complexity in inter-location transfers and inventory oversight.

  • Shared warehouse and HQ operations at Huron, supporting e-commerce fulfillment and inter-location transfers.
  • A planned roadmap for improving inter-system communication, including 3rd Party integrations, alongside their current use of BigCommerce.
